The distillery is owned by Cris Steller, who also owns Amador Distillery. Steller’s journey into distilling began with his experiences in Mexico, where he engaged with local agave farmers and distillers, sparking his interest in spirits. In January 2025, Dry Diggings Distillery began expanding its facility to include a full-service restaurant and bar named “hills.” This addition aims to enhance the customer experience by offering dining options alongside their craft spirits. The expansion will more than double the distillery’s footprint, incorporating a full kitchen, new restrooms, a bar, and a dining room. The restaurant is expected to open by early summer 2025.
Throughout its history, Dry Diggings Distillery has been committed to producing a diverse range of spirits, including whiskey, vodka, gin, and brandy.
