El Dorado Hills, CA (Feb 20, 2025) – Dry Diggings Distillery, established in 2008 and opened to the public in 2015, is the first legal distillery in El Dorado County, California, in a very long time. Located in El Dorado Hills, the distillery offers tours that discuss the history of El Dorado County, the historical aspects of the tasting room, and insights into the distilling process. ​

The distillery is owned by Cris Steller, who also owns Amador Distillery. Steller’s journey into distilling began with his experiences in Mexico, where he engaged with local agave farmers and distillers, sparking his interest in spirits. His background includes running trade associations, notably the California Retail Liquor Dealers Association, which exposed him to various wineries and breweries. Steller’s passion lies in creating spirits that embody tradition, history, and family collaboration. ​

In January 2025, Dry Diggings Distillery began expanding its facility to include a full-service restaurant and bar named “hills.” This addition aims to enhance the customer experience by offering dining options alongside their craft spirits. The expansion will more than double the distillery’s footprint, incorporating a full kitchen, new restrooms, a bar, and a dining room. The restaurant is expected to open by early summer 2025. ​

Throughout its history, Dry Diggings Distillery has been committed to producing a diverse range of spirits, including whiskey, vodka, gin, and brandy. They emphasize a “grain to glass” approach, sourcing ingredients locally to craft their products. The distillery also offers private-label liquors for other companies, showcasing their versatility and expertise in spirit production. ​

During the COVID-19 pandemic, Dry Diggings Distillery contributed to the community by producing and donating hand sanitizer to essential workers, demonstrating their commitment to supporting local needs in challenging times. ​

Visitors to the distillery can enjoy tours that delve into the rich history of El Dorado County, explore the historical aspects of the tasting room, and gain insights into the meticulous distilling process that defines Dry Diggings’ exceptional spirits. ​
